Ingredients :
  • 1 can Tuna fish (drained and finely chopped)
  • 1 medium onion, finely chopped
  • 4 tbsp. Butter
  • 3 tbsp. Refined flour
  • 1 cup Milk
  • tsp. salt
  • 1/8 tsp. pepper
  • cup Refined flour
  • cup water
  • A dash of salt
  • 2 Egg whites (stiffly beaten)


How to Make Tuna Puffs :
  1. Saute onion in a tablespoon of butter. Make a thick cream sauce with 3 tbsp. of butter, 3 tbsp. of flour and milk.
  2. Add tuna fish, onion, salt and pepper. Chill for several hours. Make a batter with cup flour and about cup water consistency of thin pancake butter.
  3. Add salt and fold in 2 beaten egg whites. Form balls about the size of large marbles out of tuna mixture and roll balls in batter. Fry for a few seconds in very hot butter. Drain.
  4. If tuna puffs are not fried for too long, they can be made several hours in advance and re-heated in a 205 degrees C oven for about 10 minutes when ready to serve. They must be served hot.
